NITRO CIRCUS!!


The Nitro Circus came to my friend's house the other day, so we went to go watch the mayhem. They started off by launching people from a human sling shot that my friend's dad built. It is two telephone poles, that he had the city come put in, and then a sling shot in the middle of them. A fourwheeler pulls you back and then launches you. The next event was shooting a bowling ball out of a home made cannon over a mountain, and then through a car. Pretty good stuff!! Here is a video of shooting the cannon through a car.


So here is my claim to fame, hanging out with Travis Pastrana!! Well maybe just for the pic, but hey I sat next to him on the couch. Actually, I don't really get that star struck, to me he is just a person, but anyway this picture is mostly for my nephews.

Coconut Milk Icecream

O.k so sorry no pic, once again, but I promise from here on out to take pictures. This is a recipe I found for coconut ice-cream. It turned out to be surprisingly good for a no dairy ice cream. Here is the link.....http://www.wholefoodsmarket.com/recipes/recipe.php?recipeId=2592. To this recipe I added 2/3 cup cocoa powder to the sugar and egg mixture to make it coconut chocolate ice cream. YUM.... I think roasted almonds added to it would be good as well. If you like coconut, and you can't eat dairy, this is the ice cream for you.

Energy Bars (minus all the crap)

So I am training for a half iron man right now, and I have been looking for a energy bar that isn't full of high fructose corn syrup, or tons of sugar, or any of the number of other ingredients that are unrecognizable. So I found a recipe that I have played around with and made a few different ways and I think I like this one the best......
(sorry no pic. we ate them to fast!)

1/2 cup brown rice syrup ****
1/4 cup of cane sugar ***
3/4 t. salt
1 t. cinnamon
1 t. vanilla

Combine all of these ingredients in a sauce pan and heat over medium high heat until the ingredients are well incorporated and it comes to a boil.

Meanwhile add the dry ingredients to a bowl----

2 cups oats
1 cup puffed rice cereal
1 cup puffed wheat cereal
1/4 cup flax seed
1 cup of anything you would like ( I have added roasted peanuts, raisins, pumpkin seeds, cranberries, candied ginger, chocolate chips, golden raisins, dates, dried papaya......really just add a mix of anything you have on hand.)
1/4 cup coconut (optional)

Combine the wet and dry mixture and press into a 9 x13 baking pan. Let it sit and it will get gooey and oh so good.

Note: I have also made this with peanut butter and honey instead of the brown rice syrup, and cane sugar

**you can get brown rice syrup at a health food store and use it as a replacer for sugar, it is just brown rice boiled down, it kind of tastes carmaley.
** try to find sugar that hasn't been stripped down of all of it's minerals, they sell a good organic sugar at Costco for a good deal.

Grounded


Wow, I am a mom, isn't it crazy to realize sometimes. I know that sounds weird, but sometimes I look at Isaiah, and Scotty, and our house and think, I am now the mom, this is my house, my husband, and my beautiful baby boy. I feel so LUCKY. Can you imagine not being a mom after you have been one. A mother's heart will never be the same, even when your kid moves away, your still a mom, you still probably worry for them, and want to take away the pains they have to go through to grow. Sometimes I have glimpses of how amazing Isaiah's spirit is, and I feel so blessed and humbled that the Lord let me raise him.

The Big Three O

That's right Scotty is officially old. No I am just playing, but we felt old when we went to Seven Peaks for his birthday and it was highschool central, we where by far the oldest there, except for one sweet guy who had us beat. He was probably late twenties, big boy, in a speeo, with studded diamond earrings on the prowl for some young girl. FUNNY... Another funny thing, while we where waiting in line, a kid tried to pick up on Stacey and I. He asked us, what school do you go to, let me guess it starts with a T...(meaning Timpview)!!! Yeah he thought we were in highschool. I just started laughing and told him that we were moms, and probably could be his mom. He stopped and was like that is wierd.... It was dang funny.


I took him to Park City to mountain bike, and go to dinner. The trails in Park City are so FUN!! Super fast and smooth. We also went to a Mexican restuaraunt, that was dang good and cheap, El Chubasco, they have a salsa bar with ten different kinds of salsa. Well Scotty, love ya tons, and can't wait to spend thirty years more with you. It's crazy, I don't know if you ever feel the age that you are. I remember thinking thirty was so old, now it feels young to me. Although thirty Scotty still has it, look at him,he is one good looking boy, and even cuter when he is playing with Isaiah, he is the cutest dad. Happy Bday!!!
